Fermentation: Alcoholic fermentation for 9-10 days in temperature controlled roto-fermenters, malolactic fermentation in oak
Aging: 9 months in medium toast, French oak barrels, transfer to stainless steel vats for 2 months before bottling, aging in bottles for another 6 months.
Alcohol content: 13.5% alcohol by volume
Production: 140,000 bottles per year
Tasting Notes: Intense ruby red in color. Aromas of wild cherry, black current and sweet plum. Silky tannins and a fruity chewy finish. Funky and intense, lots of cherry with elegant richness.
