Harvest: 10-20 days into October (manual harvesting, with small crates)

Fermentation: Destemming and maceration with skin contact, at controlled temperature (28°C) for about 30 days. Fermentation in controlled temperature (26-28°C) with constant pumping of must over grapes and wine-pressing. Malolactic fermentation in French oak casks.
Aging: 14-16 months in French oak casks, followed by 18 months aging in bottle
Alcohol content: 13.5% alcohol by volume
Production: 8,000 bottles
Tasting Notes: An elegant and precious wine, with a unique personality, rich in particularly intense floral aromas with notes that can also vary on red fruits, in conditions of high aromatic freshness, such as those that occur on Etna. In the mouth the wine has a large structure with very dense and austere tannins but not dry. The great length in the final confirms that we are facing a great wine destined to longevity.
