Altitude: 720-750  meters above sea level
Soil: Lava-alluvial and lava-clavey
Training System: Espalier
Harvest: Last week of September (manual harvesting, with small crates)
Yield per acre: 6,500 kg/ha
Fermentation: Cold maceration for about 24 hours followed by cold setting. Fermentation in stainless steel at controlled temperature (16°C) for about 20-25 days.
Aging: In stainless steel for about 6 months, followed by aging in bottle
Alcohol content: 12.5% alcohol by volume
Production:  40,000 bottles
Tasting Notes: Various scents can be appreciated, ranging from fresh citrus fruits (above all, grapefruit) to slight vegetal aromas. Some characteristic hydrocarbon features are also acquired with age. The reductive evolution of this wine releases some mineral, flint-like notes which, once poured, give it a distinguished character. On tasting, it reveals great body, with the right level of acidity, to give a fresh, long-lasting sensation.
