Fermentation: Grapes are handpicked, selected and kept separate according to their vineyard location. In the winery they are cooled down before crushing and only the free fall juice is collected. First and second fermentation with indigenous natural yeast. After first fermentation, the wines stay to mature until May after harvest, then are blended and bottled for second fermentation.
Aging: Minimum of 48 months on lees in bottle.

Production: 140,000 bottles per year

Tasting Notes: Dry and powerful, lending considerable verve to a set of flavors and textures deeply steeped with the essence of Pinot Noir. Brisk and energetic. On the palate chalk, graphite, red berries and mint emerge. White flowers, citrus and crushed rocks are layered into the finish. A serious aperitif sparkling wine that is great now and in the next 5 years to come.
