Fermentation: Grapes are handpicked, selected and kept separate according to their vineyard location. In the winery they are cooled down before crushing and only the free fall juice is collected. First and second fermentation with indigenous natural yeast. After first fermentation, the wines stay to mature until May after harvest, then are blended and bottled for second fermentation.
Aging: Minimum of 36 months on lees in bottle
Alcohol content: 12.5% alcohol by volume
Production: 13,000 bottles per year
Dosage at Disgorgement: No dosage
Tasting Notes: This Blanc de Blancs has a toasty edge to the nose with brioche and lemon citrus. The palate delivers a smoothly finished texture and sizzling acid finish. Drink now.
